Blue Potato Roses

Ingredients

  • 250 gr. Potatoes
  • 250 gr. Blue Potatoes
  • 3-4 Gloves Garlic
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 50 gr. Butter
  • 1 Pinch Paprika Powder

Instructions

  1. Peel the potatoes and grate both potatoes finely into very thin slices.

  2. Heat the butter and garlic in a pan and then add to the potato slices. Mix everything well.

  3. Now add salt, pepper and the paprika powder. I have added some fresh herbs like basil and lovage.

  4. Preheat the oven to 180 degrees and grease the muffin pan with butter. Now pour the slices layer by layer into the muffin pan. Start at the edge and work the slices inwards until a beautiful rose emerges.

  5. Bake the potato roses in the oven for 20-30 minutes (180 degrees circulating air)
