Gluten-free Low Carb Pancakes

Ingredients

  • 120 gr. Almond Flour de-oiled
  • 3 pcs Eggs
  • 200 ml High Protein Milk or any kind of milk
  • 50 gr. Greek Yoghurt
  • 50 gr. Unsweetened Peanut Butter
  • 1 Pinch Salt
  • 20 gr. Xylit
  • 1 Tbsp. Rice Flour
  • 1 Tbsp. Tapioca Flour
  • 1 Tsp. Gluten-free Baking Powder

Instructions

  1. Mix all dry ingredients well in one bowl and mix eggs, peanut butter, yoghurt, sugar, salt and milk together in another bowl.

  2. Add the mixed flours and mix well.

  3. Heat the frying pan with a little oil or butter - I use a baking spray, this requires much less fat and the pancakes absorb much less of the fat.

  4. Put the pancakes mixture in the pan to form a nice circle. You can turn the pancakes over if you see small bubbles on the surface of the pancake.
