Two-coloured potato roses

Some time ago I had posted my recipe for my potato roses for the first time. Since I am so enthusiastic, I wanted to mix the normal potatoes with blue potatoes. For this recipe I used the blue potatoes from St. Gallen. It has an intense aroma and retains its bright blue colour even after cooking. Although the blue St. Gallen potato is not the first blue potato, it is the only one from Switzerland and one of the few agricultural products exported to the EU. The recipe is quick and easy and looks great on top of that – as your own dish or side dish!

Blue Potato Roses

  • 250 gr. Potatoes
  • 250 gr. Blue Potatoes
  • 3-4 Gloves Garlic
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 50 gr. Butter
  • 1 Pinch Paprika Powder


  1. Peel the potatoes and grate both potatoes finely into very thin slices.

  2. Heat the butter and garlic in a pan and then add to the potato slices. Mix everything well.

  3. Now add salt, pepper and the paprika powder. I have added some fresh herbs like basil and lovage.

  4. Preheat the oven to 180 degrees and grease the muffin pan with butter. Now pour the slices layer by layer into the muffin pan. Start at the edge and work the slices inwards until a beautiful rose emerges.

  5. Bake the potato roses in the oven for 20-30 minutes (180 degrees circulating air)
